Its country-of-origin context is India, and its deeper culinary family is Indian regional seasoning, grilling and slow-cooking traditions. Food traditions normally evolve through households, markets, migration, restaurant kitchens and access to local ingredients, which is why apparently simple origin stories are often disputed. The Goat Brew version respects that background while adapting the dish for a modern Pan-Asian restaurant in Mumbai.
